Sourdough Bagel Sandwiches
As with any good sourdough you can either struggle to get yours started or have awesome customers to bring you a starter. I luckily had option number 2 ! After struggling getting mine started I was blessed with a gift of starter! Also if you have a kitchen-aid with a dough hook, try it its saved my fore arms many times lately!
300 Grams of active starter
1 Tsp raw honey ( or sugar)
1/4 Tsp Salt
2.5 Cups Un Bleached All Purpose Flour
1/2 Luke warm Water
) Place all ingredients except flour into bowl & mix until milky and smooth
2.) Slowly mix in flour 1/2 cup at a time until a smooth ball of dough has formed. ( or use your dough hook!)
3.) Place in a lightly oiled bowl & cover for 1-2 hours or until doubled in size
4.) Punch down your dough and place onto a lightly floured surface.
5.) Start your oven and pre-heat to 425 degrees
6.) Fill a large pot of water and get to a rolling boil. Some people like to add honey to the water also.
7.) divide dough into 8 even balls of dough.
8.) Roll them into a tight ball and punch a hole in the center of the dough ball. Slightly stretch to your desired “ Bagel size & Shape”
For bagel chips roll them into a straight line for easier slicing!
9.) Place in your boiling water for 1 minute per side then transfer to a baking sheet lined with parchment paper
10.) Coat with egg wash & add your desired toppings!
11.) Bake in oven until golden brown (18-25 minutes)
Wait at least 5 minutes slice & enjoy with a hard fried egg, some fresh smoked bacon or our favorite deli style breakfast ham!
